Winter Summer
We love our season for their individuality. Some of us get to experience the juxtaposition of opposite seasons simultaneously when we spend January in the Cayman Islands.
The Winter Summer cocktail is inspired by opposites that blends perfectly together. It’s a play on an Old Fashioned but we use a coconut fat washed rum in place of the whiskey and replace the demerara sugar with a chai syrup we make. Ingredients
0.25 oz chai syrup
3 dashes of cinnamon bitters
2 oz of Coconut Fat Washed Rum
Pineapple frond & dehydrated pineapple as garnish
nutmeg and clove as garnish
Technique
Put 3 dashes of cinnamon bitters into a rocks or old fashioned glass. Swirl it around to lace the glass
Add in chai syrup and rum
Gently lay a large ice cube into the glass
Stir until proper dilution and temperature of the drink is 35° F
Grate some nutmeg on top of the ice and lay a single clove on top of the ice.
Garnish with a pineapple frond and dehydrated pineapple slice
